Almond flour- Almond flour is a great alternative for gluten-free baking. It is a source of healthy fats and protein. Almonds flour is also high in vitamin E, manganese and magnesium. Vitamin E can help with regulating blood pressure and is a powerful antioxidant.

Coffee- Coffee contains antioxidants that can help lower inflammation and protect against certain diseases. It is the biggest source of antioxidants for most of our population, as we consume a lot of it. Its high content in polyphenols has been linked to reduced types of cancers, type 2 diabetes and heart diseases. Drinking coffee has also been linked to increased cognitive functions and reduced risk of Alzheimer’s and Parkinson's disease.

Eggs- Eggs are a great source of protein, with about 6g of protein per egg. They contain many vitamins and minerals like calcium, phosphorous, zinc, choline, vitamin B12 among others. Eggs contain antioxidants important for eye health: lutein and zeaxanthin. 

1. Pre-heat oven to 350 degrees F.
2. Mix egg and vanilla extract in a large bowl
3. Add in chocolate protein powder, cocoa powder, almond flour and mix until fully combined
4. Pour in the coffee and add more as needed to reach brownie batter texture.
5. Fold chocolate chips into the batter
6. Pour batter into a greased or non-stick baking pan. Pro tip: line baking pan with parchment paper for easy removal/serving
7. Bake for 15-17 minutes (less is gooey-er, more is cakier)
8. Top with your favorites- chocolate chips, sprinkles, nuts, drizzles, fruits- the possibilities are endless!
9. Once brownies have cooled, cut into squares and serve warm. Enjoy!
